Almost Raw Super Salad with Roasted Sesame Dressing

Sooooo many people I've been talking to lately are struggling with the same thing, they are finding it hard to eat well this time of year, we find it easier to eat healthy in the warmer weather but come winter we are looking for comforting warmness to satisfy us! Totally get it and I'm the same, however even be it cold I still eat a good dose of raw goodness for many of reasons, it provides my body with antioxidants, nutrients, vitamins and minerals and it gives me vitality and "Real" energy. Our foods contain natural enzymes when eaten raw we get the full benefits of them once we cook our foods it destroys and alters these enzymes and we don't get the full benefit of consuming these foods once cooked, eating raw foods also helps to alkalise our body, a body that is more alkalised and less acidic runs better and reduces the risk of inflammation and common cancers. So as hard as it is to be eating raw this time of year add some raw elements to each meal, your body will thank you for it!!

Ingredients

4 cups of raw veges (Nat's choice red cabbage, capsicum, carrot, celery finely shredded)

2 spring onions finely sliced

1/2 cup of chopped coriander 

1/4 cup raw peanuts

1 cup of cooked noodles cooled (I've used rice noodles)

2 tbls roasted sesame seeds

Dressing ingredients

1/2 tsp of sesame oil

1 tsp tamari sauce

1 tbls of maple syrup 

2 tbls macadamia oil

2 tbls of apple cider vinegar

pinch of salt

Directions

Cook your choice of noodles according to the directions, rinse them well and set them aside to cool down, to make the dressing place all ingredients into a small bowl and whisk until it's well combined, place the cooked and cooled noodles into a bowl pour the dressing over the noodles and mix, place the shredded veges, coriander, peanuts and spring onion into the bowl and stir until everything is well combined place the salad into a serving bowl sprinkle over the sesame seeds and enjoy, simple, yummy and sooooo good for your body and your taste buds won't complain either!!
