Almond & Lemon sugar pancakes
1 large ripe banana
2 large eggs
(Vegan Egg replacement option - 1 tbls grounded chia seeds, soaked in 3 tbls of water for 5 mins, use instead of the eggs)
1/4 cup Almond Meal
2 tbls buckwheat flour
1 tsp baking powder
3 tbls almond milk
1 tsp cinnamon powder
10 drops of Essential oil lemon oil (Optional)
1 fresh lemon to serve
Direction place all ingredients (except for the fresh lemon) into a high speed blender, process until everything comes together into a think and smooth batter.
Heat a non stick pan over a medium heat, add a small amount of coconut oil if needed, pour desired amount of batter into the pan, let the batter brown and once air bubbles start to form, it's time to flip it and get golden on the other side, remove from the pan and place on a plate, repeat until all the batter is gone.
Squeeze a generous amount of lemon juice all over the golden pancakes, and sprinkle with your choice of sugar,
