Almond, Lemon & Poppy Seed Crackers

So most of you know that I'm a sweets kinda gal! However some days I feel like a good old cracker and dip, the problem with a lot of crackers out there is that they are highly processed, contain very little nutritional value and are loaded with hidden nasties like trans and hydrogenated fats, preservatives, artificial sweeteners and chemicals omggggg yuckkkkk and Noooooo thanks!!!! So with all that in mind I wanted to create a super simple cracker that will only take you a few minutes to make, use a few ingredients and are oven baked so you wont have to invest in an over priced fancy machine to get your cracker On!!!!!!

Introducing my almond, lemon and poppy seed cracker, these are epic like seriously EPIC!!!!! You are going to die when you realise how easy these are to create and you wont look at those packets of nothingness ever again!!!! Seriously you wont and if you do, well you're all kinds of crazy, but I still love ya hehehe :) Enjoy xx

Ingredients

1 cup of almond meal

3/4 cup of poppy seeds

1 egg and 1 egg white lightly beaten

2 tbls melted coconut oil

6 drops of doterra lemon oil

2 tbls lemon juice and 1 tsp lemon rind

1/4 tsp salt and pepper

1 tbls dried oregano 

Directions

Pre heat the oven to 160 degrees, in a large mixing bowl place all in ingredients, mix well until everything is well combined, tear off 2 large pieces of baking paper and place dough in between the 2 sheets of baking paper, use a rolling pin to flatten the dough as thinly as possible for a crisper cracker, place the baking paper and dough on a baking tray and gently peel off the top layer, place the tray in the oven and bake for approx 15mins or until lightly golden, remove from the oven and let the dough cool down on the tray, the crackers will harden more once cooled, break the cracker into bite size pieces once cooled and keep in an air tight container for up to 2 weeks, sooooo simple sooooo yummmy and no added nasties, winning :) Enjoy xx
