Almond and Maple Glazed Pear Pancakes

It's pear season, yayyyy!! Time to celebrate this humble, vitamin packed nutritious underrate gift from mother nature, and does the girl have just the recipe to do just that!! High in protein, refined sugar free, gluten free and yummmmmmm!!!!!

Mother's day Inspired Almond and maple glazed pear pancakes are the perfect way to show your wonderful Mumma some delicious luvvvv for all that she does. 

Ingredients   Serves 4

2 bananas 

4 eggs

1/4 cup buckwheat flour

1/4 cup almond meal

4 tlbs almond milk 

1 tsp vanilla bean paste 

2 tsp baking powder 

1 tsp cinnamon powder 

Glazed pear Ingredients 

2 large ripe pears 

2 tsp butter

2 Tbl maple syrup 

Directions 

Finely slice the pears into long strips, in a large frying pan gently heat the butter and maple syrup until just melted, add the pear slices and cook until just golden on both sides 

Place all the pancake ingredients into a blender, blend until everything is well combined, heat a nonstick frying pan over a medium heat, pour the pancake batter in to make your desired sized pancake, cook until bubbles start to form in the batter, flip the pancake and cook until golden on both sides, repeat with the remaining batter.

Serve with the maple glazed pears and a sprinkle of flaked almonds, amazing 😉
