Almond and Ginger Pancakes with Spiced Apples

Pancakes on a Thursday morning.... Why not!!! These are so super satisfying and nourishing, you'd hardly believe they're healthy.

I've always been a sucker for a good pancake, and this here creation ticks all of the boxes! Enjoy xx

Ingredients

1 cup almond meal

1/4 cup buckwheat flour

3/4 cup Almond milk

1 tsp baking powder

2 tbls flaxseed meal 

6 tbls water

1 tsp vanilla bean paste

1 tsp powder cinnamon

1 tsp powder ginger

2 tbls maple syrup

Directions

Place the flaxseed meal and water into a large mixing bowl, whisk and set aside to form a gel like consistency, add the remaining ingredients and mix well until everything is well combined, heat a non stick pan over a medium heat, add a small amount of coconut oil and pour your desired amount of batter in, wait until small bubbles appear on the surface and then flip and cook until both sides are golden, repeat with remaining batter until all pancakes are made.

Serve with spiced apples and a good spoon of coconut yogurt.... Yummmm xx

 

For spiced apples

Ingredients

2 large granny smith apples

1 tsp powder cinnamon

1 tsp all spice

1/2 tsp powdered ginger

1 tbls lemon juice

1 tsp coconut sugar.

Directions

Peel, core and diced both apples up into bite sizes pieces, place apples and the remaining ingredients into a medium sized sauce pan, cook and let them reduce down until apples become soft and tender (I find a tsp or two of water helps to cook the apples) Cook for approx 5 minutes or until tender, Serve on top of the pancakes, these apples are also great on top of oats in winter, Yummm, Enjoy!!
