Almond and Cherry Bread
Looking for a wholesome snack for the family without all the nasties???
Well look no further, my Almond and Cherry bread is the perfect afternoon treat that won't send the tribe crazy with a sugar rush!!
Perfect for the school lunch boxes too!!
2 large ripe bananas
1 cup of cherries (Fresh or Frozen) roughly chopped
2 eggs lightly beaten
1/4 cup maple syrup
1/4 cup milk (I use almond milk)
3 tbls melted coconut oil
2 tsp cinnamon powder
1 tsp baking powder
1/2 cup almond meal
1/2 cup of spelt flour
(Buckwheat flour can be used for a gluten free option)
Preheat oven to 180 degrees, lightly grease a loaf baking tin with coconut oil,
Peel and mash the bananas well, place them into a large mixing bowl along with the maple syrup, eggs, milk and coconut oil, stir until just combined, at the remaining ingredients and mix well until everything is well combined, place batter into the greased loaf tin and bake in the oven for approx 35mins, or until a skewer inserted come out clean, let sit until slightly cooled, then enjoy xx YUMMMM!!
