Almond and Banana Pancakes with Grilled Peaches, Maple Tahini and Vanilla Bean Sauce

So who doesn't loveeeee a good pancake?? I know I do but the typical pancakes are usually jam packed with nasties, things like refined sugar, unhealthy fats and bad carbs.

Booooooo, that's not going to make your body happy :( So does the girl have a pancake creation for you!!! These lil bad boys and jam packed with protein, good fats, fibre, calcium and nutrients and of course YUMMINESS!!!! This creation celebrates summer peaches perfectly, believe me the whole family will adore this creation xx

Ingredients for pancakes

2 large bananas

3 eggs

3 tbls of almond milk

1 tsp vanilla bean paste

1/4 cup almond meal

1/4 cup buckwheat flour

1 tsp cinnamon powder

1 tsp baking powder

Ingredients sauce and topping

2 tbls faked almonds

2 ripe fresh peaches

2 tbls tahini

2 tbls maple syrup

1/2 tsp vanilla bean paste


To make the maple tahini sauce, place the tahini, maple syrup and vanilla in a small mixing bowl, whisk with a fork until well combined, you can add a tsp of warm water if the sauce isn't runny enough.

Place all of the pancake ingredients into a food processor, blend until well combined and smooth.

Heat a non stick pan over a medium heat and spray lightly with cooking spray, pour the desired amount of pancake batter into the pan, cook until bubbles start to form on top, flip over and cook until golden, repeat with remaining batter, heat a griddle pan over a medium heat, lightly spray the pan with coconut cooking oil spray, place the sliced peaches in the pan and cook on both sides until golden and warm, stack the pancakes on top pf each other, drizzle the sauce on top and place the peaches on the top, scatter the flaked almonds and booommm, there's the BEST summer treat breakfast everrrrrr :) YOU'RE WELCOME hehehe xx
